Basic Chili

There are only two of us in the house besides the cat. It’s tough to come up with a low-waste recipe to manage a whole pound of ground beef, so I’ve devised a basic chili recipe that uses a half pound of meat. The other half goes into the freezer for another pot of chili, or one of the other recipes we’ve developed/stolen/stumbled upon.

It’s dead easy to make this chili, primarily because I’m very lazy.

Ingredients:

1/2# (225g) ground beef, 85 or 90%
2 T dried onion flakes
2 T cumin
2 T chili powder
salt
pepper
large can of tomatoes (diced, whole, crushed, whatever)
1 can of kidney beans (light, dark, pink, whatever)

The onion flakes can be swapped out for fresh onion, but I’m lazy.
A chopped red or green pepper will add a bit more flavor.

Brown the beef in a saucepan. Add the onion, chili powder and cumin. Add the tomatoes. If whole, break them up a bit.
Drain the beans, and add to the pan.

Let this simmer for a half hour or so.


Serve with a bit of cheddar cheese and some Saltine crackers.
