Not really a daunting task &#8211; hamburgers, hot dogs, rolls, chips and the other usual stuff. Beans, German potato salad, and tossed salad are being done by my elves, so I just concentrate on the big stuff. But dessert. What would be good for dessert? Ah, yes! Peg&#8217;s Mom used to make us Pineapple Upside Down Cake. Without the pineapple, it stands on its own as an excellent Sponge Cake.<\/span><\/p>\n<p class=\"western\"><span style=\"font-size: medium;\">Herewith her recipe:<\/span><\/p>\n<ul>\n<li class=\"western\"><span style=\"font-size: medium;\">4 eggs<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">2 c. sugar<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">2 c. flour<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">2 tsp. Baking powder<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">1 c. hot milk<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">1\/8 tsp. Butter<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">1 tsp. Vanilla<\/span><\/li>\n<\/ul>\n<ol>\n<li class=\"western\"><span style=\"font-size: medium;\">Beat eggs until light and fluffy, approx. 5 minutes.<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Add sugar and beat again until light and fluffy.<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Mix flour and baking powder together in a separate bowl and set aside.<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Heat milk and butter in small pan over medium-high heat until milk just starts to boil.<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Remove from heat and allow to cool slightly.<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Add dry ingredients and liquid alternately until all are incorporated in the batter.<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Add vanilla and stir well.<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Bake in greased floured 13&#215;9 pan at 350 degrees for 30-35 minutes.<\/span><\/li>\n<\/ol>\n<p class=\"western\"><span style=\"font-size: medium;\"><i><u>The Pineapple Upside-down Part \u2013<\/u><\/i><\/span><\/p>\n<ul>\n<li class=\"western\">1\/2 C butter<\/li>\n<li class=\"western\">1\/2 C brown sugar, light or dark<\/li>\n<li class=\"western\">1 &#8211; 20oz can sliced pineapple<\/li>\n<li class=\"western\">Maraschino cherries<\/li>\n<\/ul>\n<ol>\n<li class=\"western\"><span style=\"font-size: medium;\">Instead of greasing and flouring the baking pan, melt the\u00a0butter in the pan<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">mix in brown sugar, stirring well<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Drain a big can of pineapple slices and lay the pineapple rings on the brown sugar mixture. <\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">If you\u2019re being really cool, put maraschino cherries inside the pineapple rings. Very pretty!!<\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Pour the batter gently into the pan and bake as directed above. <\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Cool the baked cake for about 5 minutes or so and shake the pan around to loosen the cake. <\/span><\/li>\n<li class=\"western\"><span style=\"font-size: medium;\">Invert it onto a serving platter and you get a really decent looking cake.<\/span><\/li>\n<\/ol>\n<p class=\"western\"><span style=\"font-size: medium;\">(Peg\u2019s note)<\/span><\/p>\n<p class=\"western\"><span style=\"font-size: medium;\">This was my grandmother\u2019s recipe. The amount of butter in the cake was originally passed\u00a0<\/span><span style=\"font-size: medium;\">down as whatever \u201cfits on the tip of a knife\u201d<\/span><\/p>\n<p class=\"western\"><span style=\"font-size: medium;\">(John\u2019s note)<\/span><\/p>\n<p class=\"western\"><span style=\"font-size: medium;\">I made this in a 14&#215;10 pan.
